Prepare vegetables and cut into small cubes. Chop onions, garlic and herbs. Sauté onions in a little oil and add vegetables. Deglaze the vegetables with red wine and reduce a little. Add tomato sauce, tomato paste, herbs, garlic and bouillon. Boil down for about 30 minutes. If necessary, add a little water. The sauce should not become too liquid.
Mix everthing together till it's a smooth dough and let it rest in the cold for 30 minutes. Roll it with your Pastamachine.
Melt the butter and add in the flour. Pure in a little bit of the milk and mix it. As soon as the sauce is thickening add milk again. Repeat this till you used all the milk. Season with salt, pepper and nutmeg.
Grease the mold with butter and start to layer with the Lasagne Sauce.Then a layer of the pasta dough, Bechamel sauce and another layer of pasta dough. Repeat this until you're at the top of your dish. Add a last layer of Bechamel sauce and top it with some grated cheese. Back it at 200° for 35 minutes and enjoy.
